Freshness & Quality

How fresh is the coffee?

Very fresh! We roast in small weekly batches every Wednesday. Your coffee ships Thursday or Friday and arrives Monday or Tuesday, 6-7 days post-roast, right at the edge of peak flavor development. The roast date is printed on every bag.

How long does coffee stay fresh?

Coffee is at its peak flavor 7-30 days after roasting. We recommend consuming within 3-4 weeks of the roast date for optimal taste. Store in an airtight container away from light, heat, and moisture.

Where do you source your coffee?

All our coffee comes from small-lot farms in the coffee regions of Guatemala, grown at high elevations between 1,400 and 1,700 meters (4,593 and 5,577 feet). The volcanic soil and high altitude create ideal conditions for exceptional coffees. These coffees are classified by the Specialty Coffee Association (SCA) as being high-altitude, dense beans scoring 80+ points for premium quality (Strictly Hard Bean - SHB).


Ordering & Roast Windows

How does the roast window work?

We roast every Wednesday in small batches. Place your order by Tuesday at midnight to be included in that week’s roast. Coffee ships Thursday or Friday (after 1-2 days of degassing) and arrives Monday or Tuesday, 6-7 days post-roast, right as it enters the optimal flavor window.

Why don’t you roast immediately when I order?

We roast in small weekly batches to maintain consistent quality while working closely with our roasting partner. This approach ensures every bag is roasted within days of shipping, never warehoused, and arrives at optimal freshness. By roasting Wednesday and shipping Thursday or Friday, we give the beans proper degassing time while they’re still fresh. It’s far superior to commercial coffee that sits on shelves for months.

What if I miss the Tuesday deadline?

No problem! Your order will be included in the following week’s roast. We’ll send you a confirmation email with your expected roast and ship dates.

When should I brew my coffee after it arrives?

Your coffee arrives 6-7 days post-roast. You can brew immediately, or wait 1-3 days to hit the traditional 7-10 day sweet spot for peak flavor. The roast date is printed on every bag so you can decide based on your preference.

What is degassing and why does it matter?

Fresh-roasted coffee releases CO₂ for 7-10 days. If brewed too soon, excess gas interferes with extraction. We roast on Wednesday and ship Thursday or Friday, giving beans 1-2 days to degas at the roaster. During transit, additional degassing occurs. By the time your coffee arrives (6-7 days post-roast), it’s approaching the optimal brewing window.

We ship anywhere in the United States and Canada.

How much is shipping?

Shipping is free on all orders - no minimum required!

How long does shipping take?

We roast every Wednesday and ship Thursday or Friday. Orders placed by Tuesday at midnight are included in that week’s roast. Your coffee arrives Monday or Tuesday, 6-7 days after roasting, approaching peak flavor. Orders placed after Tuesday join the following week’s batch.

Do you offer expedited shipping?

Not currently, but our standard shipping is quite fast. If you need coffee by a specific date, please email us at david@casalind.com and we’ll do our best to accommodate.


Brewing & Preparation

What’s the best way to brew Casa Lind coffee?

We love pourover for showcasing the nuanced flavors, but our coffee works great with any method:

  • Pourover: 1:16 ratio, medium grind, 200°F water
  • Espresso: 18-20g dose, fine grind, 25-30 second extraction
  • French Press: 1:17 ratio, coarse grind, 4-minute steep

What equipment do I need?

At minimum: a grinder and your preferred brewing device. We recommend:

  • Burr grinder (more consistent than blade grinders)
  • Kitchen scale (for accurate ratios)
  • Filtered water (chlorine affects taste)

Can I use your coffee for cold brew?

Absolutely! Use a 1:8 ratio (coarse grind) and steep for 12-24 hours in the refrigerator. Our Classic works particularly well for cold brew.


Returns & Satisfaction

What if I’m not satisfied with my coffee?

We stand behind our coffee. If you’re not completely satisfied, contact us within 15 days of delivery and we’ll make it right with a refund or replacement.

Can I return unopened bags?

Yes, unopened bags can be returned within 30 days of delivery for a full refund minus shipping costs.


Subscriptions & Wholesale

Do you offer subscriptions?

Not yet, but we’re working on it! Join our email list to be notified when subscriptions launch (coming Spring 2026).

We partner with a specialty roaster in Jersey City who roasts our coffee to our exact specifications in small batches. This ensures consistent quality and allows us to focus on sourcing and customer relationships.
